Vegan Banana Bread

Banana Bread… **insert drool emoji here**! My go-to when i need to create a healthy Vegan/Vegetarian dessert.  I have perfected this recipe over the years to include more fibre, crunch and flavour, and now it is ready to be shared with you all!  It can be eaten as a breakfast option, or a nutritious snack. Its so filling! I hope you enjoy making and eating it as much as I do!!

Many of us tend to carry extra weight around our abdominal area, so this blog is designed to give you some extra knowledge on how to help reduce it! Now, I’m not saying we need to have washboard abs and look like the cast from Baywatch, but keeping a close eye on our waistline and what we’re eating can make a difference!

Cauliflower, Sweet Potato & Chickpea Soup

Like many people trying to brave the winter chill, soup is one of my favourite go-to meals to make, as it warms the soul pretty fast! What I love doing is combining a variety of seasonal vegetables to make the ultimate vegetable soup. I have started to add a lot of legumes to my soups, in order to increase the feeling of fullness after one bowl, and provide additional protein and fibre to a meal.
I hope you enjoy my Cauliflower, Sweet Potato & Chickpea Soup. Its thick, hearty and very satisfying!

Pork & Vegetable Wonton Soup

Now, I am no Wonton- making expert, however my husband loves Wonton Soup so over the years I have made my own to include more vegetables into the mixture. Garlic and ginger are so rich in nutrients that not only help combat the common cold, but improve our overall immune system. The flavours of this dish are bold, and I usually add fresh chilli for added heat and nutritional goodness. HINT: I usually make my soup 12 hours in advance in order to let all the ingredients combine further before adding my wontons and serving. Trust me – this dish packs a punch!
